HABANERO & BIRD’S EYE CHILI PEPPER TEQUILA INFUSION
Now this is easy to make. Anyone can do this at home. It’s very cheap. All the peppers didn’t even cost more then one dollar with tax.
INGREDIENTS:
What you need is one 100% Agave Unaged (Blanco or Silver) Tequila (750 ml). Avion is an amazing crisp & clean Tequila with ethereal citrus and floral notes. I highly recommend using Avion. Three Habanero peppers and three bird’s eye chili pepper. Bird’s eye chili pepper are also known as thai peppers. Sweet notes will come from the Thai peppers and the citrus aromatics from the habanero.
DIRECTIONS:
Slice the stem off the habanero and thai peppers. Cut the Habanero peppers into four small quarters. Don’t cut out the pith or deseed the pepper. The seeds and pith will go into the bottle for the infusion. Also, the pieces need to be small enough to get the pepper out of the tequila bottle after the infusion is finished. Cut the stem off the thai pepper and cut a slit down the pepper. Place the habanero peppers and thai peppers into the Tequila bottle. Close the bottle with the lid and give it a shake or two. How long do you infuse the peppers? I infused for 4 hours. Some sites say for a 24 hours or two days. I believe 24 hours is way to long. The tequila was quite spicy after 4 hours. Best thing to do is to taste the tequila every hour or so to ensure the heat isn’t to much for you. Be sure to save a little tequila for a taste comparison of before and after infusion. After you are satisfied with the amount of heat; strain tequila into another food safe container. Turn the bottle upside down and gently shake to dump the peppers out of the bottle. Rinse the bottle out with water to get rid of any small pepper particulates or seeds. Allow bottle to dry completely and pour infused Tequila back into the empty Avion bottle. Thats it; your finished.
Anyone can do this. Preparation time is short and easy compared to making home made syrups. Give it a try and start enjoying your spicy Magaritas and Bloody Marias. Cheers!
